We always carry Natural Process Ethiopian to make our Oromia, but our friends at the Sidama Coffee Farmers Cooperative Union (SCFCU) produce some spectacular washed coffees as well. While Ethiopian coffee overall has a unique flavor profile, their washed coffees are known for their citric liveliness, and complex floral aromatics. Cleaner than a Natural Process (no funky fermentation here!), this coffee really shines as a light roast, where all the brightness, sweetness, and aromatics of this coffee are on full display.
In addition to bringing us this delicious coffee, Wayicho carries out programs for SCFCU that are crucial for small farmers, like investing in infrastructure and providing training on organic best practices. SCFCU works tirelessly to improve the lives of their member farmers (the majority of whom work farms of less than 1 hectare!), which is why we are always proud to roast their amazing beans.
