Large hard bean with a smooth, full taste. Slightly dry, cocoa taste. Great roasted light or dark. Everybody loves this green coffee and it is very easy to roast.

I am always heartened and humbled when I visit the farmers of Nicaragua. In a country so recently torn by war, the people are amazingly upbeat, compassionate and forgiving - a lesson for us all. Our Nicaraguan partner, PRODECOOP (in Esteli) consistently produces award-winning, high-altitude specialty coffee that we purchase directly.

Our People-Centered Development work includes building the first cafe-roastery in Central America, prosthetics and jobs for landmine victims, and self-esteem building and income generation for women. We are also working on roya (rust bacteria) prevention programs at the community level to insure income for the farmers and great coffee for us going forward.

Nicaragua has become a leading coffee producer in the Americas due to the great volcanic soils and the increased professionalism of the farmers. Nicaraguan coffees are bold yet smooth, relatively low acidity, consistent and well processed. Look for coffees from Esteli, Jinotego, Matagalpa, and Nueva Segovia. The coffees are known for their well-rounded tastes, mild acidity and cocoa undertones.

Forgotten Children Literacy Project (2016-ongoing)

  • Mobile libraries and volunteers rotating to distant villages to engage children in literacy and reading programs

My Favorite Green!

This has become my favorite green bean to roast! I used to purchase from sweetmarias, but the quality of deans (specifically this bean) is noticeably better. Like some who’ve posted, I target a medium roasted using my gene cafe and get a consistent roast with hints of caramel and chocolate.

For anyone who’s interested specifically on my roast “profile”: preheat on max heat for 5 min, drop beans in and set 431F for first 7 min, 446F for 2 more min, 473F for 2 1/2min. (First Crack at around 10min 30seconds). Total roast time 11.5min

Solo or a blender

If you want to give a friend an introduction into why people roast at home, this is a great place to start. Mellow, smooth, and the chocolate and cocoa undertones on this bean will make anyone curious about good coffee, raise their eyebrows and say nothing but mmmmm. By itself it calls you back for another sip until it’s gone. Added into any other roasted bean, just make the first word Cocoa or Choco and your spot on. I always keep a bag on hand to treat myself or to blow someone’s mind. Keep the beans bouncing!

Don’t Buy this coffee!

Seriously, I hesitate to tell anyone how good this coffee is which would just decrease it’s availability and drive up the price. Is it the best coffee, maybe not. But for the current price, it can’t be beat. I use a Gene Cafe roaster and do pour overs. I exclusively seek the best light roast coffees, which does NOT mean less flavor! The best kept secret is that good coffee does not need an Italian/French (dark)roast. Sure, some coffee is great when roasted darker, but a premium coffee should provide a sweet, caramel, light acid, complex flavor. I’ve learned that stores sell 99% low quality dark roast coffee that has a well-marketed “dark roast” flavor which I like to refer to more accurately as “burnt”. This coffee would be wasted if roasted as a dark roast. I can only wonder if people don’t realize that the roast temp,&time, ground-size, water used, and brew method are seriously considered. If you are obsessed with all aspects of quality coffee and appreciate the science of perfectly roasted coffee, then you deserve to know this coffee is a solid 8.5/10. Rather a 10/10 considering the value.

Amazing Flavor

This is the second time I order Nicaraguan Organic from Dean's. I have Roasted this coffee light roast and Dark Roast, Either way this coffee has beautiful notes.
I find it to be one of my favorite coffees. I roast it with Gene Cafe Roaster.

Great Coffee, Easy Roasting

I use a popcorn air-popper to roast the beans. The beans are nicely uniform so I can control the roast level quite easily. My preferred brew is a stove-top espresso, and it is delicious light or dark.
