We found this coffee to be very smooth and satisfying, at a medium-dark roast level, it's hard not to like, any way you take it. It's full bodied, nutty and bittersweet, with a mild, non-lingering aftertaste. We are proud to. We are proud to feature this microlot as a testament to the extraordinary Chajulense farmers, and hope we you enjoy drinking it as much as we enjoy bringing it to you!
Cafe Chajulense (pronounced Cha-hoo-LENZ-ay) comes from the mountainous western highlands and holds the story of epic story of grit, resilience, and the power of the human spirit.
The remote village of Chajul endured decades of war between the Guatemalan military and indigenous people trying to keep their land from being stolen. Today, the cultivation of coffee, honey, and women's textile production are helping to lift the community - economically, socially, and environmentally.
The Coffee Trust, founded by our dear friend, Bill Fishbein, is a nonprofit dedicated to helping these indigenous communities improve their agricultural practices, diversify their incomes, and raise healthy families. We love this work and the delicious Fair Trade Organic coffee grown by farmers in Chajul. You're going to love it, too!
(Bill and Dean Cycon co-founded an earlier nonprofit, Coffee Kids, in 1988, with the goal of educating the coffee industry about the conditions of farmers' lives, and creating development programs funded by the coffee industry, to support farming families.)
