Our Mexican beans come to us from Cooperativa de producción Tzeltal-Tzotzil, a group of family owned farms operating in 26 indigenous communities north of San Cristobal De Las Casas.

In Chiapas, we have worked for years with local communities on education, health and providing opportunity for victims of the Death Train. At the request of PROISCH we have been organizing and funding advanced organic technical trainings that create improved soil and coffee quality. As a result of this continuing program, high end coffee buyers have been paying premiums for this fantastic coffee (but you can get it for a lot less from us!)

There are several coffee regions in Mexico and each has slightly different characteristics, but by and large you can count on Mexican coffee to be smooth and round in the mouth, medium acidity, not too bold, whether they come from Chiapas (nutty and sometimes slightly spicy), Vera Cruz (slight cocoa taste), or Oaxaca (almond flavors). The large, smooth beans have excellent aroma, medium body and slight acidity. A mellow coffee with a softly sweet flavor.

Bokashi Compost (2013 - ongoing)

Immigrant Relief (2019)

  • Donated money to support immigrants coming from Mexico
  • Funding committed: $2,300

Hurricane Relief (2017)

  • Emergency assistance to 23 families for food and home repairs after major Hurricane

Roya Education and Prevention in Central America (2013 - ongoing):

  • Education and support to stop the spread of la roya (coffee leaf rust)
  • Funding committed to date: $8,600

Delightful!

This is one of the nicest coffee profiles I've ever had the pleasure of experiencing. The aroma as soon as you open the bag is delightful. The flavor is reminiscent of a slightly spicy clove cake with the right amount of sweetness and acidity to balance and lingers just long enough to appreciate. The mouth feel is full bodied. Overall, very highly recommend this one.

Have to Have It!!

I probably should try other aromas, but I’ve always been that type of person to stick with one product that I really love! You know, like ice cream? I use my French Press and I have a cream frother, which makes the best cup of coffee! No sweeteners. I have it autoshipped every 9 weeks for years!

Best coffee ever

This is literally the best coffee I’ve ever had. I’ve been buying this blend for 3 years now and nothing compares. I’m always left feeling disappointed when I go to cafés for a latte because their coffee is just watery or tastes burnt. The Aztec two step is the perfect blend of impeccably roasted beans that gives a lovely rich and smooth flavor that I could drink all day long.

A life-altering experience

The question arises. Why only now, after drinking coffee for so many decades, do I have the pleasure of drinking a coffee as good as this? I love Ahab’s Revenge and many other of Dean’s Beans…for that matter, in the past, the coffees from many other roasters. But a cup of ATS is like transport to heaven itself.
