Raw, green coffee beans require roasting to unlock the rich, delicious flavors we get from what would otherwise just be a green, grassy-smelling bean.

But roasting isn’t just about applying heat; it’s a precision process that determines whether your cup bursts with subtle florals or comforts you with rich notes of dark chocolate.

What Happens Inside the Roaster?

Every bean passes through distinct stages on its way from raw to roasted. Each stage builds meticulously on the last, and the roaster's job is to guide the process so the bean's best characteristics shine through.

At Dean’s Beans, we use Loring roasters, which are propane-fired and use a patented air recirculation system to roast the coffee gently and efficiently, reducing energy use and emissions compared with other conventional designs. This improves both the coffee’s flavor and the environmental impact. We then program the roasters with our roast profiles for each coffee and monitor every batch to ensure a consistent flavor profile.

1. Drying

Green coffee beans arrive with about 10-12% moisture trapped inside. During the early stage of roasting, they absorb heat and start releasing that moisture as they slowly shift from green to pale yellow, often giving off a grassy, humid scent as the water inside turns to steam.

2. Caramelization & Acid

Next, the beans start undergoing chemical reactions like the Maillard reaction, which creates many of the brown pigments and complex aromatic compounds that define the coffee’s character. Some of the sugars also start undergoing caramelization, which creates those sweeter caramel notes many of us enjoy. The beans turn into a toasted pale brown, smelling of baking bread or hay, as sweetness slowly builds.

The natural acidity also begins to transform or degrade as roasting continues.   

3. First Crack (and Beyond)

As roasting and the chemical reactions continue, the beans enter first crack, producing a popping sound as they expand and release trapped steam, sounding a lot like popcorn. From here, they’re either stopped at or shortly after first crack for a light roast or they’re roasted until they’re a medium-brown (medium roast) with more caramelization and a sweeter flavor.

Finally, for dark roast lovers, we roast the beans until at least the start of second crack, a higher-pitched sound that occurs as the beans' structure breaks down further, releasing gases and natural oils that migrate to the surface. Here sweetness begins to decline as flavors of bittersweet dark chocolate and smoky notes develop.   

4. Cooling

Once we hit the desired roast, our roasters have a built-in cooling system that quickly cools the beans to prevent over-roasting and preserve the intended flavor profile.  

From Light to Dark: How Roast Level Shapes Flavor

As you journey from a light to a dark roast, the flavor changes, even if you start with the same green beans from the same origin. 

Light Roast

We roast light roasts the least, producing a light brown bean with a matte surface without any visible oils. The lower temperatures allow the coffee’s more subtle, nuanced flavors to come through, which may include floral, citrus, fruity, earthy, or other flavor notes, depending on the origin.  

Medium Roast

We roast medium roasts past first crack but finish before second crack. At this stage they often balance origin character with more pronounced roast-forward flavor notes, producing smoother, sweeter-tasting brews with notes that may include sweet chocolate, cocoa, or caramel. 

Medium-Dark Roasts and Medium-Dark Blends

Medium-dark roasts are often roasted just a bit further than a medium roast but still before or just at the very beginning of second crack.

However, at Dean’s Beans we also make medium-dark blends by blending the sweeter notes of a medium with the more robust flavor notes of a dark roast together to create a complex flavor profile. And for coffee lovers who enjoy both, that means we don’t have to choose between dark vs. medium roasts

Dark Roast

We roast dark roasts the longest, so naturally they’re the darkest brown and may even appear almost black in a very dark roast. They typically have a visible sheen from the oils that rose to the surface and show more roast-forward flavor notes of bittersweet chocolate, toasted nuts, warm spices, and smoky flavors that become more prominent than those of the origin. 

Origin Meets Roast: Why the Same Bean Tastes Different

The magic of roasting lies in how it interacts with the coffee’s origin.

A coffee’s growing region, including the soils, elevation, and climate, known as terroir, and the processing methods used all contribute to its flavor characteristics. We meet the farmers who grow our beans in part so we can better understand where those unique flavors come from. Still, it’s the roast level that determines which traits take center stage, those of the origin or those of the roast.

For instance, when you lightly roast our certified organic, Fair Trade shade-grown Ethiopian coffees from our farmer partners at the Sidama Coffee Farmers Cooperative Union, they retain vibrant acidity with delicate floral and bright blueberry notes. If you roast it dark, the more subtle floral and fruity notes start giving way to a more pronounced smoky sweetness.

Or, if you lightly roast our certified organic, Fair Trade shade-grown Guatemalan coffees from our partners at the Asociación Barillense de Agricultores (ASOBAGRI) cooperative, it produces a medium-bodied cup with clean, sweet, and nutty cupping notes and bright acidity. But if you take that coffee and roast it dark, it’ll produce a fuller body with muted acidity and more bold, bittersweet, and smoky notes.

So, how long you roast determines the final flavor profile, but that flavor is also shaped by the origin. This is why many coffee lovers enjoy home roasting coffee so they can see firsthand how roasting shapes the flavors in their cup.
